The Domaine de la croix des vainqueurs began in early 2006. The vineyard covers 8 Hectares (nearly 20 acres), in the heart of the VOUVRAY area ( AOC - white wine ).
Chenin, still called “Pineau de Loire”, is the only grape of this “appellation”.
On the high plateau of Vouvray the vines of the  “Bouchet” are more than 45 years old and grow on a shallow soil of clay and limestone. This “terroir” is ideally suited to the production of white wines and most notably of the dry varieties.

A rationalized approach to tillage reflects a healthy respect for the environment.
Treatment of the soil is limited and grass is left between the rows of vines to diminish their vigor and obtain smaller grapes.

At harvest time either small 15kg cases or a grape picking machine are used depending on the estimated yield.

After being sorted on tables in the 'chai' (wine shed) the mature grapes go through a lengthy pressing process after which the grape juice is left to clear in 15 to 50 hectolitres stainless steel vats.
All fermentation is accomplished with indigenous yeasts.
All the still wines are vinified in 225l to 600l casks between 1 and 5 years old.
Some of the basic wines used in making the sparkling wines are also vinified in casks.
Maturing is a lengthy and meticulous process and takes around 10 months.
Stirring the lees will improve 'fatness' and 'substance', and make the wine more seductive for the palate.
The sparkling wines remain in the cellar on “lattes” (for riddling) for 18 months for the first vintages and 40 months for the top of the range vintages (such as the Cuvée Premium ).
