History: This vineyard,established in the last century, is the traditional Languedoc “ campagne “, this last term being understood as an estate including all the buildings - master’s house, “ramonétage “ ( or employees’ lodgings) and the winery- surrounded by the vines, the whole forming a unit.
In early february 1996, this vineyard was bought by two young oenologists,from Toulouse University, Isabelle & Laurent COUSTAL.They have decided to launch into the captivating adventure of taking a vineyard to develop it.
Region: 30 kms away from the world-known city of CARCASSONNE, the vineyard lies in the heart of Appellation MINERVOIS , on LA LIVINIERE hillsides. It gently slopes down in terraces ( 5 to 10 % ) at an average altitude of 250 m, facing full south, sheltered from the North winds.
Terroir: Pebble top soil with a high percentage of clay, chalk and manganese, exceptional terroir due to the nature of its soil and its exposure.
Area: 38 Ha ( 87 acres )
Vine varieties : 27% carignan, 35.8% syrah , 28.7% black grenache , 8.5% cinsault.
average age of plants : + 20 years
density of plantation: 4200 to 5000 plants per ha i.e 1680 to 2000 per acre
Vinification: red wine: mechanical harvesting,classic vinification with a long maceration for 3 weeks ,ageing in concrete tank for 12 months giving the plaisir cuvée.
The top quality wine is selected ( syrah, old grapewine of carignan ...), and transfered to oak barrels ( 25% new oak) for 12 months,giving “la Cantilène “
rosé: mechanical harvesting , bled rosé ( wine run off skins in early fermentation) alcoholic fermentation at a low temperature ( 15°C), malo-lactic fermentation not yet started.
Awards: Chateau Sainte Eulalie wines are favoured with an excellent reputation with the press as they are mentioned in “ Parker guide of French wines “, “ Hachette guide 2012 “ and “Wine Spectator august 2005”.They are regular medal winners in various competitions: “Best buy ”in SIAL 2010,”gold medal in Paris 2011, and silver medal in 2013” “exceptionnal vintage 2009” and “TOP 100 in the Wine Spectator 2011” for “la Cantilène”
Anecdote: “ La Cantilène de Sainte Eulalie” is the first romanesque poetic work , written in 881. It is considered as the oldest document of the French Poetry.
